Here are all the ingredients. You can use leftover rice. Here I forgot to take picture of lemon juice.
Here I am making fresh rice, you can also use leftover rice for this recipe. First, boil the rice with 3 cups of water and little bit of salt.
Cook the rice for 10 minutes or till rice is cooked till 90%.
Once done, drain the rice and keep it side.
Heat oil and butter in a pan / wok on medium flame, add cumin seeds and let it splutter.
Add fine chopped green chili and ginger paste. Saute them for a minute.
Add fine chopped and saute till onion turns little translucent.
Add frozen corns and saute for one minute. If you are using fresh corns, boil the corns for two minutes before use.
Add chopped spinach / palak, salt and turmeric, mix well and saute till palak / spinach cooks well.
Once palak / spinach is cooked, add garam masala and mix well.
Add rice in the mixture and mix well.
Add lemon juice and mix well with the rice. Cover the rice for 5–6 minutes or till rice gets cooked perfectly. Put the flame on low.
Serve hot and enjoy with your favorite curry.
